TRACCIABILITÀ DEI PRODOTTI ITTICI: STATO DELL'ARTE E PRESENTAZIONE DI UN'INNOVATIVA BLOCKCHAIN TECHNOLOGY APPLICATION PER LE FILIERE ITTICHE

The purpose of this thesis is to analyze the use of blockchain technology applied to the seafood food sector. The purpose is to present a state of the art and to develop and present a blockchain application that can provide the end consumer with the ability to monitor and track the entire life cycle of a seafood product, starting from fishing at sea to display in a supermarket or restaurant. To this end, information about each process (production, processing, distribution, resale) will be entered by stakeholders and the life cycle of the product they are about to consume will be shown to the end customer (through a QR Code).

Lo scopo della tesi è quello di analizzare l'utilizzo della tecnologia Blockchain applicata al settore ittico alimentare. Il fine è quello presentare uno stato dell'arte e di sviluppare e presentare un'applicazione blockchain in grado di offrire al consumatore finale la possibilità di monitorare e tracciare l’intero ciclo di vita di un prodotto ittico, partendo dalla pesca in mare fino all’esposizione in un supermercato o ristorante. A tal fine, verranno inserite dagli stakeholder delle informazioni relative ad ogni processo (produzione, trasformazione, distribuzione, rivendita) e verrà mostrato al cliente finale il ciclo di vita del prodotto che sta per consumare (attraverso un QR Code).
